90g of shredded swede per person, season with salt and pepper, microwave for 3 mins on full power. Serve with sauce of choice....tonight's choice Mediterranean mince!


Sprouts

Dont be tempted to cross the bottom like your granny used to do. This makes them soggy and bitter.

Pan Fried Brussel Sprouts

Heat 1 tsp butter and 1 tsp coconut oil ( or olive oil ) in a pan for 1-2 minutes until butter is beginning to brown. Add sprouts and 1 tbsp of lemon juice. Cook for 2 minutes. Serve with salt and pepper

Leeks

Shredded stir fry

Melt a knob of butter. Add 250g shredded leeks, 250g shredded sprouts and 250g spinach. Cook slowly until wilted


Shredded Sprouts and Leeks

Wipe a wok with olive oil.
Fry 100g shredded sprouts and 100g shredded leeks for 4/5 minutes or until tender.
Add what ever flavourings you like.......how about smoked paprika, or garlic, soy sauce and ginger or just a few chilli flakes
